Receipe of Antonio Colmenero de Ledesma - 1644

100 Cocoa Beans
2 Chillis (or black pepper)
Handful of anise
earflower
2 Mecasuchiles
1 vanilla
2oz cinnamon
12 almonds
12 hazelnuts
½ lb sugar
achiote

Jasmine chocolate of the Grand Duke of Tuscany

10lb roasted, crushed beans
jasmine flowers
8lb sugar
3oz vanilla pods
4oz cinnamon
½ oz ambergris

Method layer the jasmine and the cocoa. Leave for 24 hours, then mix and add more layers. Repeat 10 times. Add the remaining ingredients and grind together.
